With this recipe you will be making 24 cookies

I have cookies craving so often and, for healthy reasons, I do not want to eat all the time cookies that are not good for me, so I found this yummy recipe and adapted it to what I found in my pantry!

These are sure to satisfy your cravings, trust me!

Before you start! If you do not have some of the ingredients, just use what you have, you can easily adapt the recipe to what you can find these days...for instance you can also ignore the lentil flours and stick to one type of flour. If you have cashew butter, well, use that one!

Ingredients

20gr coral lentils flour

20gr buckwheat flour

20gr coconut sugar

½ teaspoon baking soda

120gr almond butter

1 organic, free- range egg

50gr or 70% or more chocolate ( or cocoa nibs, why not?!)

Preheat the oven to 175°C.

Line a baking sheet with parchment paper.

Instructions

In a large bowl, combine the dry ingredients and mix well.

Add the nut butter, the egg and mix until combined. Gently fold in the chocolate. Drop the dough onto the cookie sheet by spoonfuls and gently flatten each one to your desired dimension. Bake for 10 minutes, or until golden brown. Cool on a baking rack and enjoy with a cup of tea or coffee mmmm!
